My bread

A simple ciabatta-like bread with whole grain. Freshly baked bread is hard to beat. This bread is well suited as bread or jam sandwich. Plus you do not have to wait for the dual fermentations!
You will need: 5 cups lukewarm water 1 cup milk (not too cold!)
25g yeast
2 tsp salt
1 tablespoon honey
About 6.5 cups flour
6 cups whole wheat flour 
Flour to utbakning
Dissolve yeast in water, add milk, honey, salt, and finally flour. Work quickly dough.
Sprinkle some tablespoons flour and let rise under canvas in 1-1 ½ hours.
Preheat the oven to 240 degrees.
Sprinkle out about ½ cup flour on work surface and Turn out the dough. Knead not!
Sprinkle with flour and flatten the dough slightly. Divide the dough into even sized pieces and place on baking sheet with parchment paper. The bread does not rise again.
Bake in center of oven for 17-20 minutes.
Allow to cool without a towel so the crust gets crispy.
