Carrot Soup

My new favorite soup.
For 4 servings you will need:
6 carrots
1 yellow onion
1 clove of garlic
1 tbsp plain flour
1 liter vegetable stock
2 tablespoons yogurt (eg Turkish) or crème fraiche
Grated nutmeg, salt and pepper
yogurt for serving
Dice the carrots and chop the onion. Pour into a large enough pan and fry in butter.
Squeeze the garlic clove and red with the flour.
Add the broth and let the soup simmer for 15 minutes.
Remove the pan from the heat and add the yogurt.
Blend the soup smooth with a hand blender. Season with spices.
Serve with a dollop of yogurt and like freshly baked bread.
